Hand picked ripened grapes from old Aglianico vines produce this enormously expressive and full of character wine. The vines are set 500 meters above see level, that offers the right conditions for a late-October harvest. Lightly pressed followed by maceration in steel silos for about 20 days. It is then separated from its must and transferred to French oak barriques for a period between 12 to 18 months. The result is a very concentrated and dense wine. Only the best barriques make it to the Gold Limited Edition of the Eremo San Quirico.
